Raw Vegan Carrot Cake


  • 2 and a half cup baby carrots, shredded
  • 1 cup almond meal
  • 1/2 cup shredded coconut
  • 1 cup pitted dates
  • 1/4 cup raisins
  • 1 tbsp raw agave syrup
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of salt

Raw “cream cheese frosting”

  • 1 cup raw cashews soaked in water overnight
  • 1/4 cup of water
  • 1/4 cup virgin coconut oil
  • 3 tbsp agave syrup
  • 1 tsp vanilla extract
  • juice from 1/2 lemon
  • pinch of salt
  • cinnamon (optional)

Cake preparations: Shred carrots and set aside. Using a food processor, blend almond meal, raisins, dates and your seasonings together. Mix together with shredded coconut, carrots and the agave syrup. Let it set in the fridge while you make the cream cheese. 

Cream cheese frosting: Using your food processor, cream together all the ingredients EXCEPT the coconut oil until it is VERY smooth. When everything is blended together, melt your coconut oil and pour on top of the frosting. Let it set in the freezer for 5-10 minutes

Assemble: This is the fun part! You can set the cake into cupcake holders or make it into one big cake. Top on your frosting however you’d like. Freeze for another 30 minutes before eating
